چکیده

Effects of addition of alum (0.00 -1.0% w/w) on pasting and some physicochemical characteristics of cassava starch were investigated with view to evaluate the potential of alum as a cassava starch modifying agent. The modified starch was prepared by pre-treatment of the native starch with alkaline at room temperature prior to modification using alum. Alum modified cassava starch were characterized by improved pasting (515-183 B.U) properties compared to native starch (585 B.U.) in terms of lower setback viscosity. Other functional properties notably solubility and swelling power of the cassava native starch were improved with concomitant decrease in gelatinization time and apparent viscosity on modification as the quantity of alum added decreased. Comparative assessment of the properties showed that alum enhanced thinning of cassava starch thus the product may find usefulness in products where such functional starch are required.

The Physicochemical Properties of Starch Component of six Iranian Rice Cultivars

Using a wide range of techniques, including differential scanning calorimetry, X-ray diffraction, Rapid Visco Analyser and Fourier Transform Infera Red Spectroscopy, some physicochemical properties of the starch fraction of six Iranian rice cultivars (Tarom, Tarome Hashemi, Neda, Ramezani, Fajr and Kamfirouzi) [1]were studied and compared. DSC data showed that starch granules of different rice ...

Comparative studies of the functional and physico-chemical properties of isolated Cassava, Cocoyam and Breadfruit starches

Starches were isolated from cassava, cocoyam and breadfruit by wet milling process. The physicochemical, functional and pasting characteristics of the isolated starches were then examined and compared. Moisture and fat contents varied between 4.91 – 12.94% and 0.90 – 2.20% respectively. Bulk density and pH ranged between 0.64 – 0.68 and 5.53 – 6.15, respectively. Cassava and breadfruit starches...

Chemical and functional properties of cassava starch, durum wheat semolina flour, and their blends

High-quality cassava starch (HQCS) produced from high-yielding low-cyanide improved cassava variety, TMS 30572, was mixed with durum wheat semolina (DWS) on a replacement basis to produce flour samples containing 0, 20, 30, 50, 70, and 100% cassava starch. They were analyzed for chemical composition (proximate, amylose, free sugars, starch, wet gluten, and cyanide) and functional properties (pa...

Acidification and Starch Behaviour during Co-Fermentation of Cassava and Soybean into Gari

Changes in acidification and starch behaviour were investigated during co-fermentation of cassava and soybean into gari, an African fermented product. Non-volatile acidity, pH and starch content were evaluated using standard analytical methods. Starch breakdown and pasting characteristics were also analysed using a Brabender viscoamylograph. Fermentation caused significant variations in the pH,...

Hydrolysis of granular starch at sub-gelatinization temperature using a mixture of amylolytic enzymes

Native granular starches (corn, cassava, mung bean, and sago) were hydrolyzed using amixture of alpha-amylase and glucoamylase at 35 ◦C for 24h. Hydrolyzed starches were analyzed for the degree of hydrolysis and for physicochemical and functional properties. Corn starch showed the highest degree of hydrolysis, as evidenced by the presence of distinct pores penetrating deep into the granules. Enz...
